Another wintry weekend here in the city, and that means winter markets, holiday lights, and baking! Below is a cookie recipe from Tia Elvira, and they’re fluffy and light, lemon sugar cookies. Bonus: they’re really easy to make and taste so good!
Yields: 2 dozen cookies
Ingredients:
1 cup granulated sugar
2 sticks unsalted butter
3 eggs
3 cups all-purpose flour
1 teaspoon baking powder
zest from 1 lemon
Directions:
1) Preheat oven to 350° and lightly grease a cookie sheet with cooking spray or butter. In a large bowl, beat sugar, butter and eggs until creamy and smooth.
2) Sift together flour and baking powder, and add to wet ingredients. Add lemon zest and beat together. Roll rounded tablespoonfuls of dough into balls, and place onto the cookie sheet.
3) Bake for 15 minutes or until golden. Let stand on cookie sheet for two minutes before removing to cool on wire racks.
